And once you're convinced of the gospel of good food, keep learning!  This ain't dogma, this is an ongoing education.

• Appalachian Sustainable Agriculture Project's Local Food Guide helps us decide where to go for seasonal fare, and gives us an idea of who might be interested in supporting us as local artisans.

• Of all the microbreweries in the area, only Pisgah Brewing Company is certified organic.  We are currently exploring their offerings for a future truffle recipe.
• Slow Food Asheville is a local chapter of a great international organization.
